Quesadillas


You could use any filling but we did spinach and cheese (JJ loves it and trying to up the iron intake!)

to make 1 quesadilla you need
2 flour tortillas
some soft cheese
1 ball of frozen spinach
some grated cheddar

Cook and drain the spinach.
spread a thin layer of soft cheese over a tortilla, sprinkle over the chopped spinach and some grated cheese. Place the other tortilla on top.
Heat up a frying pan and when it is hot add the tortilla sandwhich (no oil). Cook for a couple of minutes until golden and a bit crispy then turn over and cook the other side.
I use a pizza cutter to cut it into small wedges.

Oat, cheese and apple scones

200g self raising flour
1 tsp baking powder
50g buttter
50g fine oatmeal (I used readybreak as it was inthe cupboard)
1 tsp sugar
125g cheddar cut into small cubes
2 apples cut into small cubes
5-10 tbsp milk

Heat oven to 200 c
Sift flour and baking powder into a bowl.
Rub in the butter until it looks like breadcrumbs.
Stir in the oatmeal and sugar.
Add the cheese and apple.
Add the milk a bit at a time until it makes a stiff dough.
Pat out onto a floured board until about 2cm thick.
Cut into scones using a cutter or a knife (finer shape may be good for some LO's but JJ like the round ones!)
Bake on a greased tray for about 15-20 mins. It would have been nice to brush the top with milk or egg or something.

We enjoyed them spread with butter - enjoy!
