İçli köfte

Кюфта с мясом (İçli köfte)
На 3-4 порции
300 г. говядины (филе или толстый край); горсть грецких орехов; 1 ст. булгура; 1-2 луковицы; 1 яйцо; 100 г. консервированных помидоров, горсть грецких орехов; 1 ч. л. семян пажитника; по 1/2 ч. л. зиры, сухой мяты, хлопьев острого перчика; 2 ст. л. муки; 1 л. масла для фритюра; соль, чёрный перец

Мясо зачистить от плёнок, нарезать тонкими ломтиками поперёк волокон, мелко порубить до состояния однородного фарша. Пажитник подсушить в сухой сковороде на малом огне, смолоть, запарить вместе с булгуром 2 ст. подсоленного кипятка, дать постоять под крышкой 30 минут. Тем временем пряности подсушить и смолоть в ступке с крупной солью. Обжарить в масле на малом огне мелко рубленный лук до мягкости, всыпать смолотые пряности, добавить мясной фарш, готовить на сильном огне до изменения цвета мяса на светлый. Всыпать мяту, добавить помидоры, размять и обжарить всё за пару минут, убрать с огня. К остывшей мясной начинке добавить смолотые в ступке орехи, мелко рубленную петрушку, посолить, перемешать. В запаренный ранее булгур с пажитником всыпать муку, вбить яйцо, влить воду, вымесить и отбить массу до однородности (если булгур крупный, смолоть всё блендером). Лепить шарики из булгура, делая затем большим и указательным пальцами выемку, затем выложить внутрь мясную начинку, края защипать. Жарить в масле при температуре 200°С до ровного румяного цвета. Подавать сразу.

Отличный рецепт Ингредиенты:
рис круглозерный - 9 ст. ложек
вода - 0,5 л
молоко - 0,5 литра
рисовая мука - 2 ст. ложки
сахар - 0,5 стакана
ванильный сахар - 1/2 пакетика
грецкие орехи - 1 шт

Приготовление:

1. Залить рис кипятком, дать постоять 30 минут, хорошо промыть, положить в кастрюлю, налить воды и варить на среднем огне до готовности.
2. В готовый рис налить молоко, перемешать и довести до кипения.
3. Рисовую муку развести в небольшом количестве молока, аккуратно влить в рисово-молочную смесь.
4. Также добавить сахар и ванильный сахар, помешивая, варить минуты 2.
5. Готовый пудинг горячим разлить по креманкам и остудить.
6. Посыпать тертым орехом (можно корицей)..
